I've been using this tactic in FIFA 12 after much struggle finding out how to successfully use a central defender to attack (70s Bayern style), and it took me months to finally realize it's suicide to use just one CB. It cost me many losses but now it's finally starting to show fine results.

You could also go back to the nineties and use a German 5-3-2 with the wing-backs moving forward. Ramos could be sweeper and Arbeloa (or Coentrao) and Marcelo would be the wide defenders providing support on the wings.
